vegetarian avgolemono

I consider myself somewhat of a soup connoisseur and avgolemono might take the top spot for best soups of all time. Comforting, nourishing, and super bright thanks to a healthy dose of fresh-squeezed lemon, I could eat this nearly every day. On super lazy days I'll make it with just rice/broth/lemon juice. My fave broth for this is the Better Than Bouillon No-Chicken.
